On a roast curve there is one moment — after the sugars develop, before the body flattens them — when a coffee is the most itself. Roasters call it different things. We call it the meridian, and the entire company is organized around hitting it.
That means small batches, roasted to order, shipped the same afternoon. It means printing the production curve inside every bag flap, so you can see exactly where your batch was dropped. And it means saying no to the fourth, fifth, and sixth roast the spreadsheet wanted.
